Our Story - Indian Restaurant Covent Garden
Colonel Saab's journey began in the Grade II listed Holborn Town Hall, a site steeped in history, originally serving as a public library in 1894. Today, it’s transformed into a vibrant space where the exotic design and decor complement the building’s original features with warm colours, brass, wood, and handcrafted chandeliers from India. This location also boasts two elegantly designed private dining rooms, accommodating up to 60 people.
In 2023, the Colonel Saab story expanded with the opening of a second, larger restaurant in Trafalgar Square. Mirroring the meticulous attention to detail and cultural richness of the Holborn location, the Trafalgar Square restaurant features a sleek bar lounge, an opulent dining room lit by ornate Firozabad chandeliers, and private dining rooms.

Colonel Saab is the culmination of the journey and adventures across India of two people, Roop's parents, an Army Officer named Colonel Manbeer Choudhary and his wife Binny. The food is a blend of tradition with global ingredients and techniques, from street food signatures to home style Indian cooking and dishes taken from royal kitchens. Enjoy inventive Indian small plates created to share from regional recipes derived from home-chefs. Colonel Saab offers something for every palate and every occasion. It is a celebration of community and the exchange of eating well and of warmth. The restaurant showcases the unity as well as the diversity of the cuisines of India with a myriad of influences gained across centuries. Colonel Saab is a contemporary viewpoint with an old soul, and a nostalgic palate of memories, aromas and flavours.

After returning home, they mulled over and encapsulated the whole experience. The zeal to serve a community, a region or a human felt stronger than anything else. They ventured into hospitality with a modest hotel and started their journey towards boutique and palace hotels. The hotels are today managed by their proud son
Roop Partap Choudhary. The couple have always aimed to infuse a sense of humility, glamour and history with their best- loved home-style traditions from across India, and Roop now hopes to do the same with Colonel Saab.

HEAD CHEF OF COLONEL SAAB INDIAN RESTAURANT COVENT GARDEN
From humble beginnings, learning at home, and cooking in the family kitchen with his mother; he rapidly progressed towards an established career and the winning of multiple awards. After a decade in India Sohan began his journey with several years working in the middle east before joining Roop and his team at Colonel Saab in London.
Sohan's main expertise is rooted in Modern Indian food. However, having also worked with some of the world's best chefs producing international cuisines, he brings an excellent touch of fusion to his exotic flavours.
Sohan always prides himself on creating a unique menu containing traditional and regional nuances developed by him, that will greatly enhance the guest's culinary dining experience.
